Woody's Crab Shack

Stopped at woody's crab shack on the way back from Baltimore this summer and it was awesome. We got a doz crabs and there was carnage. This was the second visit to woody's which I found in this great travel book of neat places off of I-95 my favorite highway in the country. I95 is home to many waffle houses, some abandoned cars in Florida, the super flea, jrs superstore, south of the boarder, willies weanie wagon, and many other great places along the way. You can take i95 all the way from NY to Florida and its a drive I recommend doing at leads once to see some awesome americana.
Regardless, woody's is just off of exit 100 on i95 in north east, md. Definitely worth a stop for lunch or dinner. It took us 2 hours to eat all those crabs but it was time very well spent and I brought home a woody's t shirt!

Festiva chicken!

Named for the car of course, now they have the fiesta but I always liked the festiva more. I was at price rite on Thursday night trying to decide what to make for dinner. The only request I had was for chicken the rest was up to me. I've been trying hard to come up with healthy recipes.

Ingredients:
5 limes
2 pkgs of chicken tenders (you can use any kind of chicken, but I wanted
Something boneless and skinless and tenders happened to be a better price than full breasts)
1 garlic bulb
A bunch of fresh cilantro

Mince the garlic and the cilantro and spread about 1/2 of those two ingredients in the bottom of the pan.
I sliced 2 limes, you can leave the rind on or slice it off. I sliced mine off for presentation and ease of eating the lime later. Then cut the other 3 limes in half and juice them.
Layer the chicken in the pan so none of the pieces are overlapping. Then place the rest of the garlic/cilantro mixture over the top of the chicken and pour the lime juice evenly over the whole pan.
Cover the pan with plastic and put in the fridge for about an hour (longer is fine too so if you want to make it in the morning and toss it in the oven when you get home that's fine too) just make sure you uncover the chicken before you put it in the oven!
Cook the dish at 400 for about 40 minutes (cooking time may vary depending on he cut of meat you use)

Enjoy, it's a great healthy recipe with no added salt, but tons of flavor! Serve with rice and veggies.

FYI this meal was not only healthy, but very cheap to make. About $8 worth of chicken, the fresh cilantro was 79 cents for the bunch and the limes were 5 for $1. So this healthy meal only costs about $12, proving you can eat healthy and cheap. Plus we had tons of leftovers and it got rave reviews.

Yoshi sushi

So now that my office is in a new area I had to find new places to get lunch from. I decided to try out yoshi sushi on rt 9 in latham ny as they were recently the recipients of a glowing review in the local newspaper.
I ordered takeout, but they do have a small seating area as well as a few shelves of Japanese items you can purchase.
Yoshi and his wife have been open since 1998 and it was classic fresh sushi. Not too much frill or pomp, but a focus on quality ingredients. They were very nice and lunch was reasonable, and I will be ordering from them again!
I got two rolls which seemed to make it a lunch special (the online menu was hard to read, but they sent me back to my office with a much better takeout menu) so I got two rolls, miso soup, a salad with ginger dressing, and a can of soda for $15 including a tip.
I got a bamboo roll- eel, cucumber, and avocado. The second one was just a plain salmon roll (I wanted to try something without sauces or other flavors so I could see the quality)

Sunday morning

Things have been rather stressful at home lately, but my regular readers will remember that I blog for me and to try and forget about all that day to day stress, so I'm going to spend this rainy Sunday morning in bed with the kitties and my iPad. The churpumple!!!

Dun dun dun....... Again very belated since I made this for last years office Christmas party. What on earth is a churpumple you ask? Only a ridiculous and awesome bastardization of holiday foods. So it's a three tiered cake with a pie in each layer of cake. It's a cherry pie in chocolate cake, on top of a apple pie in yellow cake, on top of a pumpkin pie inside a spice cake. Sounds crazy you say? Well it was a little crazy and very heavy to lift. I used cake mix and store pies to save time. As is it ended up taking about 6 hours start to finish, once we ate it, it was worth all the work. Please enjoy these photos, I think it was a once in a lifetime creation. P.s. I had to make all the cakes in springform pans to make putting the layers together possible.

St patty's day

So this is a bit late, but I just came across this photo from st pats day this year. I made corned beef and cabbage for my whole office, this was all I had left to take home and I made two big briskets. The best compliment I got was from one of my friends who's grandma makes it every year, but since she moved she wasn't able to enjoy it. She said it was as good if not better than grandmas.
I put the two briskets in my crock pot with a big bottle of Guinness and a cup and a half of brown sugar. I let the corned beef cook overnight. Then I transported it to work and took out the brisket, tossed the potatoes and carrots in for 2 hours. Last but not least I threw the cabbage in for the last hour letting all the veggies cook in the beer juice. Perfect and will now be a tradition at my house it was amazing!

Healthy dinner

Finally having a little bit of blogging time to relax before a very very busy work week ahead of me.
Wed night I stopped on the way home and bought some haddock fillets on the way home, I had been eyeing them on my earlier shopping trip that week. It was pretty yummy very easy and healthy too!
I cooked the fish in the oven in foil packets. A tiny drizzle of olive oil, some no salt lemon pepper seasoning, and an ice cube on top of the fish. Then bake in a 400 degree oven for 25 minutes. The ice cube in the foil packet steams the fish in the oven and just a tiny bit of oil to keep the fish from sticking to the foil.
The Broccoli was done in the wok with some pineapple and two tablespoons on low sodium teriyaki sauce. Yum! Enjoy the photo!!
